In respectful remembrance, we have crafted this limited release roast as a tribute to our Brothers and Sisters who paid the ultimate price for freedom, as well as to all who have served and fallen in defense of our nation.
At the going down of the sun and in the morning, we will remember them. Lest we forget.
Introducing our 11th Hour Commemorative Roast, a truly remarkable coffee experience. We begin by carefully selecting this exceptional Ethiopian bean, cultivated by small holder farms in the renowned Dumerso Wet Mill region of the Gedeo Zone. Grown at high elevations between 1800–2000 MASL, these indigenous cultivars—74110 and 74112—are naturally processed on raised beds, producing a coffee celebrated for its depth and distinctive character.
This coffee delivers a delightful sensory experience that captivates the palate with vibrant fruit notes, delicate sweetness, and a smooth body. Expect a harmonious balance of peach, caramel, and bright citrus tones, creating a clean, lingering finish. The medium roast enhances these tasting notes, inviting you to savour each sip and explore the depth of this remarkable specialty bean.
However, the 11th Hour Commemorative Roast signifies more than just an extraordinary flavour journey. With each cup, you pay tribute to the brave individuals who have served our nations. We are honoured to donate a portion of our proceeds to support veterans, reflecting our commitment to the spirit of Remembrance Day.

Background
This multiple award winning coffee is grown in the micro region of Hoja Blanca (White Flower), Huehuetenango by Juan Villatoro and his family. The area is absolutely ideal for growing Red Bourbon cultivars where the coffee receives the perfect balance of sun, shade and rainfall at the perfect elevation and grown in incredibly rich soil conditions Juan and his family have been producing quality coffees for over three generations and in fact, are one of very few lineages to achieve a top ten cup of excellence award at over 75% of the competitions held in Guatemala.
